India’s a huge country and it includes people of various races and religions thereby giving rise to a lot of variety of foods on very special occasions. If I talk about one special event which is marriages which happens all over India all over the world in fact. Specifically, in the state of Punjab, there is one food which is being loved by all the people equally which is known as Makki di roti and Sarson da saag. Sarson here stands for mustard and Saag stands for a mixture. Makki is mainly the maize flour and a roti is being prepared out of it which is you can call in real terms as bread and it is quite lengthy to prepare Sarson Da Saag and the procedure is not being easily handled by everybody so the only way in which it is being cooked is lots and lots of leaves of mustard along with spinach and locally grown herbs are collected, they are washed and dried and then they are boiled in a pressure cooker mainly for approximately two and a half hours. The mixture is then rendered into the pot kind of thing and maize flour is added along with in installments in the sense that first small batch of maize flour is added and then it’s being mixed and then this procedure continues until the whole mixture is not lumpy but yes the consistency is not as compared to liquid. Now, once this is prepared it can be reused for a couple of days and the only reason why people like it is because of the unique taste of the Saag along with the Roti and me in particular why I like it is because of some reasons. First of all because of its nutritional value as I told earlier because of its unique taste and there are so many things that you can do with the Saag because it depends upon the person to person what kind of things they want to add for example I like chillies so I definitely like my Saag to be spicy and I can also sort and get with a mixture of garlic, onion and ginger. Some people like it in its blended taste so they do not add anything but yes everybody in the whole state of Punjab specifically add as a topping in the form of Ghee(Butter) which is purely made from Buffalo’s milk or Cow’s milk.
